
Going on a long journey? Having a nerdy party? Just like herby snacks?

Ingredients:
125 g. butter (2 sticks), room temperature
170 g. honey
30 g. fresh herbs
30 g. dried herbs
240 g. AP flour
90 g. oat flour
50 g. nut flour
60 g. hot water
(Note on herbs: Mix these up! I have used thyme, elderflower, cardamom, grains of paradise, sage, lavender, etc. But the combination of dried and fresh is important to get that layered flavor that makes you think of long journeys and endless fields.)
Instructions
Preheat oven to 300 degrees Fahrenheit.
Beat butter and honey until it is VERY light and fluffy, then beat in herbs. In large bowl, whisk together flours, then add gradually to beaten mixture until just incorporated. (You may need to knead by hand if your mixer starts to jam.) As mix thickens, slowly add hot water until mix is a firm dough.
Roll to about ½” thick (or however you want them) directly on parchment paper. Bake for 20 minutes until slightly golden. While warm, cut into squares (and press in design if you wish), then cool completely. Wrap in clean, dry, food-safe leaves (sassafras, banana, or corn husks look neat) or food-safe paper and twine. Stores extremely well!
This makes a few dozen, depending on size. And they are actually quite filling!
